Napa wineries and the October crush
People from all over the world fly to Napa Valley to experience fall leaves and the wine crush. We are so lucky to live close! We headed out with some dear friends Saturday to Artessa Winery at the top of a hill near Carneros and Highway 121. The decks offer a mind-boggling view, delicious Pinot Noir, and crisp whites. Also, it’s set in this super hip, ultra-modern building with a gorgeous wine salon that reminds me of the W Hotel.
Afterward, we found a great Mexican restaurant on Sonoma Square called Mesa. It has authentic Mexican food and many options for GF and non-GF. I had the best shrimp tacos! My companions chowed down on homemade tortilla chips (sadly not GF) and guacamole. I had GF corn tortillas with pico de gallo! I highly recommend it!

This is a subject near and dear to my heart as I, along with many people, have struggled with inflammation in my past, especially migraine. Eating the Mediterranean diet has made a HUGE difference for me. Many health conditions can be linked to inflammation, including joint pain, arthritis, headaches, and even heart disease.
Food choices, lack of exercise, stress, high blood pressure, weight gain, and more can contribute to inflammation. As far as food goes, no anti-inflammatory diet is more well-researched than the Mediterranean Diet, and it’s delicious! Below is a med-style salad my hubby makes often!
I am a holistic nutritionist, and I love sharing practical ideas. Add a few of these every day and make this change slowly. If 90% of your diet is anti-inflammatory, there is still room for splurges like this lasagna. If you get too extreme and perfectionistic about this - let’s be real.. you will quit.

Extra Virgin Olive Oil
Leafy Greens (spinach, kale, lettuce, etc.)
Cruciferous veggies like broccoli and cauliflower
Fatty Fish (think salmon and halibut)

Creamy White Chicken Spinach Lasagna
This delicious lasagna has an irresistible, cheesy, silky sauce. It can easily be translated into a gluten-free, non-gf, or dairy-free recipe!
It is also very satisfying and filled with delicious parmesan, ricotta, mozzarella, shredded chicken, and spinach. This is one of those recipes that is great for guests. A friend, Kyla, made this recipe, and this is what she said. P.S. She is not on a gluten-free diet.
I have you tell you it blew my expectations out of the water! My husband and two of my siblings and I devoured it. The Barilla gluten-free noodles I used were so good! Could not tell it was gluten free. And I used King Arthur’s gf flour in the sauce and it was perfect. Soooo good! - Kyla
