The holidays are coming soon, and it’s a great time to start preparing your stress reduction mindset! Breathe deep and slow down! While no one can do all these things every day, it’s good to prioritize your health with self care. Here are some things I love!
STAY HYDRATED: Carry a water bottle with you everywhere you go! Otherwise if you are like me you forget to drink water.
Have a healthy afternoon snack! Try veggies and hummus, peanut butter and celery, a handful of nuts, hard-boiled eggs, etc. It’s a long time between lunch and dinner. Protein snacks prevent your being famished at dinnertime and maintains blood sugar levels!
Take a five-minute relaxation break or step outdoors for five minutes. We love the Mindfulness App.
Stretch daily to keep limber, prevent injuries, and de-stress. This is great after a walk or workout with some chill music.
Add fiber rich foods to your diet like ground flaxseed, chia seeds, beans and fresh fruits and veggies. We also love omega rich walnuts which are great in salad!
As we move towards the end of the year and all the hustle bustle remember your life is not a Pinterest board. Things do not have to be picture perfect for your life to be perfect for you! All of us have things going on which can be challenging including being on a gf diet. Just do your best every day!
I love the flavors in a stuffed pepper, but often (most times) with stuffed bell peppers, no one eats much of the pepper; instead, they dive into the yummy filling! This recipe deconstructs the stuffed pepper, adding all the delicious flavors, turning it into an easy and healthy mid-week meal! This is an easy, fast recipe for the table that tastes like you have been cooking for hours! Kids and adults love it!
At home, I follow a gluten-free diet, while my husband can eat anything. He's a good sport. Usually, he joins me in my gluten-free meals, joking that he gets his gluten 'on the outside.’ We recently dined at Bistro Don Giovanni, a must-visit in Napa Valley. While I savored grilled halibut and heirloom tomatoes, Steve happily indulged in rigatoni and plenty of Italian bread. The waiter made a joke and moved the bread to Steves's side of the table. At least wine is gluten-free!
Stuffed peppers come in all shapes and flavors, from the spicy kick of chili relleno to the Mediterranean saffron-style peppers that I can't get enough of. Usually made with rice, ground meat, veggies, spices, tomato sauce, or chicken broth, there's a stuffed pepper for every taste. They're perfect for those cool Fall nights when you want something hearty and comforting.
This comforting and cozy skillet recipe is quick and easy to make. You can settle in on the couch with a good movie or Netflix series like Nobody Wants This, which I just binged. I highly recommend it!
I digress! On to the recipe!
